Quick Vegetable Manicotti - cooking recipe

Ingredients
    1 (15 oz.) nonfat Ricotta cheese
    1/2 c. original wheat germ
    2 egg whites, beaten
    1/3 c. chopped parsley (fresh) or 2 Tbsp. dry
    2 Tbsp. Parmesan cheese
    3/4 tsp. Italian seasoning
    1/2 tsp. salt
    1 (5 oz.) pkg. manicotti (about 12)
    2/3 c. sliced zucchini
    2/3 c. sliced yellow squash
    2/3 c. sliced mushrooms
    1 (28 oz.) jar low-sodium spaghetti sauce
    1/2 c. water
Preparation
    Heat oven to 350\u00b0.
    Lightly spray 13 x 9-inch glass baking dish with no-stick cooking spray.
