Potato Candy - cooking recipe

Ingredients
    1 or 2 potatoes
    1 lb. powdered sugar
    1 lb. coconut
    1 tsp. vanilla
    chocolate for dipping
Preparation
    Peel potatoes; boil until done.
    Mash with fork; measure out 1 cup.
    Mix with powdered sugar and vanilla.
    Mixture will be runny. Add coconut; mix well.
    Refrigerate until firm.
    Make into logs; cover with chocolate.
    Roll in nuts of your choice (pecans or walnuts, etc.).
    Keep cool and slice as wanted.
