Zucchini Soup - cooking recipe
Ingredients

1 Tbsp. butter
1 small onion, finely chopped
6 c. chicken broth
5 medium zucchini, sliced
fresh herbs to taste
lemon wedges and/or yogurt
Preparation

For
fresh
herbs, use basil, tarragon, cilantro, thyme or oregano.
Saute
onion
in\tbutter and oil until soft.
Add broth, zucchini
and
herbs.
Simmer, covered, for 10 minutes. Transfer to\tblender in batches and puree.
Season with pepper and garnish with lemon and/or dollop of yogurt.
Can be served warm or chilled.
Serves 6.
