Hot Pineapple Eggnog - cooking recipe

Ingredients
    16 egg yolks
    16 egg whites
    2 c. sugar
    3 qt. pineapple juice
    1 qt. cream
    1/4 c. orange rind, grated
    2 c. good home brew (optional)
Preparation
    Combine egg yolks, 8 egg whites and 1 cup sugar; beat thoroughly.
    Bring pineapple juice to boiling point.
    Add cream and reheat.
    Pour over first mixture, stirring constantly.
    Beat remaining egg whites and add sugar.
    Fold egg whites into hot mixture.
    Sprinkle with orange rind.
