Poached Salmon Steaks - cooking recipe
Ingredients

2 salmon steaks (1/2 to 3/4-inch thick)
1 Tbsp. butter
1 sprig or 1 pinch dried parsley
1 Tbsp. each: finely chopped carrot, onion and celery
3 peppercorns
1 whole clove
a bay leaf
1 Tbsp. salt
2 c. white or dry red wine or 1 c. wine and 1 c. water
mayonnaise or lemon
Preparation

Melt 1 tablespoon butter in a large frypan with cover.
Add parsley, carrot, onion and celery.
Cook 3 minutes.
Add peppercorns, clove, bay leaf, salt and wine.
Bring to a boil. Place the salmon steaks in the pan and allow to simmer (just below boiling), covered.
After 5 to 7 minutes, gently turn over and continue to cook for another 7 to 10 minutes.
The salmon is done when it flakes.
You will notice a color change, too, from bright pink to lighter pink.
Serve with mayonnaise or lemon on the side and the remaining bottle of wine.
