Garden Tomato Juice Blend - cooking recipe

Ingredients
    22 lb. tomatoes
    3/4 c. diced carrots
    3/4 c. chopped celery
    3/4 c. chopped green pepper
    1/2 c. chopped onion
    1 Tbsp. salt (optional)
    bottled lemon juice or citric acid
Preparation
    Wash
    and drain tomatoes.
    Remove core and blossom end. Cut into
    quarters.
    Simmer
    vegetables
    20
    minutes.
    Press through fine
    sieve
    or
    food
    mill.
    Season with salt.
    Add 2 tablespoons bottled lemon juice or 1/4 teaspoon citric acid to each pint. Bring
    juice
    blend
    to a boil.
    Pour hot juice in jars,
    leaving 1/4-inch for headspace.
    Adjust caps.
    Process pints 40
    minutes or quarts 45 minutes in boiling water bath. Makes about 7 quarts.
