Baked Carrots - cooking recipe

2 c. mashed cooked carrots *
1 c. Ritz cracker crumbs
1 c. milk
3/4 to 1 c. Cheddar cheese
1/2 c. butter
1/4 c. grated onion or flakes
1 tsp. salt
1/4 tsp. pepper
1/8 tsp. cayenne (red pepper)
3 eggs
