Zucchini Soup - cooking recipe
Ingredients

1/2 c. chopped onions
2 Tbsp. butter or margarine
4 c. fresh zucchini, unpeeled, sliced (1 1/2 lb.)
2 1/2 c. chicken broth (can use bouillon cubes)
1/2 tsp. nutmeg
1/4 tsp. basil
1 tsp. seasoned salt
1/4 tsp. red hot pepper sauce or regular pepper
1 c. half and half
Preparation

Saute onion in butter in 2-quart saucepan.
Add zucchini, chicken broth, nutmeg, basil, salt and pepper.
Cover and simmer for 15 minutes or until zucchini is well done.
Turn into blender bowl or food processor (in 2 batches) and process until pureed. Return to saucepan and stir in half and half.
Blend well.
