Beef Stick - cooking recipe

Ingredients
    4 lb. lean ground beef
    2 Tbsp. liquid smoke
    1 tsp. oregano
    1/2 c. Morton Tender Quick
    1 1/2 tsp. coarse ground pepper
    1 tsp. garlic powder
Preparation
    Mix together with hands and let stand in refrigerator for 24 hours.
    Divide into 4 equal parts and roll into log, working out air pockets.
    Wrap each log in 15-inch square cheesecloth and bake on oven racks with drip pan under for 4 hours at 225\u00b0.
