Three Pepper Shrimp With Linguine - cooking recipe

Ingredients
    12 oz. linguine
    1 c. chicken broth
    1/4 c. peanut butter
    2 Tbsp. sesame oil
    2 Tbsp. soy sauce
    2 Tbsp. rice (or white) vinegar
    1/2 tsp. red pepper flakes
    1 Tbsp. olive oil
    1 Tbsp. chopped fresh ginger or 1 tsp. powdered ginger
    1 tsp. chopped fresh garlic
    3 red peppers, cut in thin strips
    1 lb. medium shrimp, peeled and deveined
    1 (4 oz.) can chopped green chiles
    6 scallions, chopped
Preparation
    Cook pasta until almost al dente.
    In a blender, combine chicken broth, peanut butter, sesame oil, soy sauce, vinegar and red pepper. Process until smooth.
    Set aside.
    Heat olive oil in a large nonstick skillet and saute ginger and garlic 2 minutes.
    Add red peppers and shrimp and saute until shrimp is opaque (about 4 minutes).
    Stir in chile peppers.
    Drain linguine and return to pot.
    Stir sauce and add to the pasta; cook until pasta is al dente.
    Toss pasta with the shrimp and peppers and top with scallions.
    Serves 4.
