Mexican Chicken And Rice Dinner - cooking recipe

Ingredients
    4 boneless, skinless chicken breasts
    1 c. chunky salsa
    1 pkg. taco seasoning mix
    2 c. original Minute rice
    2 c. water
    1 c. canned black beans, drained
    1 c. frozen corn
    1 c. shredded Cheddar cheese
Preparation
    Cut up chicken into bite-size pieces and stir-fry in a skillet with a little oil.
    Add salsa, taco seasoning mix and water to skillet.
    Bring to a boil over high heat.
    Cover and reduce heat to medium-low.
    Simmer for 10 minutes.
    Bring back to the boil and stir in Minute rice, black beans and corn.
    Sprinkle on the Cheddar cheese and cover.
    Cook on low heat for 5 minutes. Great served with tortilla chips and sour cream.
    Serves 4 to 6.
