Flounder In White Wine Sauce - cooking recipe

Ingredients
    2 lb. skinned fluke fillets
    1 1/2 tsp. salt
    dash of pepper
    3 sliced tomatoes
    1/2 tsp. salt
    dash of pepper
    2 Tbsp. butter
    2 Tbsp. flour
    1/2 c. milk
    1/3 c. dry white wine
    1/2 tsp. crushed basil
    parsley for garnish
Preparation
    Sprinkle both sides of fillet with salt and pepper; arrange in a single layer in a greased baking dish.
    Place tomato slices over fillets.
    Sprinkle with salt and pepper.
    Melt butter in saucepan and blend in flour.
    Gradually add milk and cook, stirring constantly until thick and without lumps.
    Remove from heat and stir in wine and basil.
    Pour sauce over the tomatoes and bake at 350\u00b0 for 25 minutes or until the fish flakes when tested with a fork.
    Sprinkle with parsley and serve.
    Serves 6.
