Pasta Aglio-Olie E' Pomidori Freschi(Pasta With Garlic And Oil With Fresh Tomatoes) - cooking recipe

Ingredients
    6 cloves fresh garlic
    1 tsp. salt
    6 fresh mint leaves
    1/2 c. extra virgin olive oil
    about 6 very ripe fresh tomatoes
    1 lb. spaghetti
    Romano or Parmesan cheese
Preparation
    In a bowl, mash garlic with salt.
    Add mint leaves and mash. Add olive oil.
    In another bowl, chop tomatoes.
    Add garlic and oil ingredients.
    Do not cook.
    Cook spaghetti al dente.
    Drain pasta; reserve 1/2 cup pasta water and add to tomatoes, and toss with pasta.
    Serve with cheese.
    This is a very old family favorite.
