Potato-Stuffed Meat Loaf - cooking recipe

Ingredients
    2 (10 oz.) red skinned potatoes
    1 Tbsp. vegetable oil
    3 c. shredded green cabbage
    1 medium onion, finely chopped
    7 oz. lean ground beef
    7 oz. lean ground turkey
    1/4 c. plus 2 Tbsp. plain dried bread crumbs
    2 large eggs
    1 c. canned crushed tomatoes
    1 Tbsp. dried oregano, crumbled
    1 tsp. dried basil, crumbled
    1/2 tsp. celery salt
    1/4 tsp. black pepper
    chopped parsley (to garnish)
Preparation
    In medium saucepan, add potatoes and cold water to cover. Partially cover and bring to a boil.
    Reduce heat and simmer until tender when pierced, 30 to 35 minutes.
    Preheat oven to 325\u00b0. Line a 9 x 5-inch loaf pan with a sheet of aluminum foil; allow foil to overlap in large nonstick skillet.
    Heat oil.
    Add cabbage and onion; saute until well browned, 10 to 12 minutes.
