Delicious Chicken Salad(Prep Time: 30 Minutes; Serves 4) - cooking recipe
Ingredients

2 whole chicken breasts, halved (4 pieces), deboned and skinned
2 tsp. salt
1/2 c. water
2 Tbsp. sherry or lemon juice
2 tsp. soy sauce
2 medium cucumbers, pared
crisp lettuce leaves
1/2 c. toasted, slivered almonds
2 Tbsp. toasted sesame seed for garnish (optional)
Preparation

Sprinkle chicken breasts with salt.
Heat water, sherry and soy sauce in large skillet to simmer.
Add chicken; cover and simmer 10 minutes, turning once, until chicken is cooked through (do not overcook chicken or it will become dry).
Remove chicken to cutting board to cool.
