Fresh Apple Cake - cooking recipe

Ingredients
    1 1/2 c. vegetable oil
    2 c. granulated sugar
    3 whole eggs
    2 1/2 c. sifted self-rising flour
    1 tsp. vanilla
    2 tsp. cinnamon
    3 good sized peeled apples (I use Red Delicious)
    1 c. pecans
Preparation
    Mix first 3 ingredients in bowl.
    Add flour a little at a time and add remaining ingredients.
    Stir until well mixed.
    Pour into greased tube pan.
    Bake at 325\u00b0 for 1 hour; cool in pan until firm, about 30 minutes.
    Turn out, leaving pan over released cake an additional 30 minutes.
