Old Fashion Farm Fry - cooking recipe

Ingredients
    6 slices bacon, diced
    4 medium boiled potatoes, diced
    2 Tbsp. chopped onion
    1/2 tsp. salt
    1/4 tsp. pepper
    1 c. grated sharp Cheddar cheese
    6 eggs, slightly beaten
Preparation
    In large skillet over medium heat, fry bacon until crisp. Drain off all but 1 or 2 tablespoons fat; add potatoes, onion, salt and pepper.
    Cook until potatoes are an ivory color. Sprinkle with cheese and add eggs.
    Stir quickly until eggs are set.
    Serve at once.
    Makes 4 servings.
    Good served with cooked apples.
