Sicilian Veal Cutlets - cooking recipe
Ingredients

veal cutlets, sliced very thin
olive oil
eggs
plain white bread crumbs, dried
Romano, Parmesan or Locatelli cheese, grated
parsley, chopped
pepper to taste
Preparation

Pour olive oil into frypan and let it get very hot.
Beat some eggs in one bowl and put bread crumbs and seasonings in another bowl.
Dip cutlet in egg, then in bread crumbs and place in frying pan.
Turn over quickly, as soon as it browns.
After both sides have browned, place cutlet on dish lined with paper towel to drain oil.
Sprinkle grated cheese and fresh parsley on cutlets.
Serve with salad a side pasta dish of boiled potatoes with chopped onion and oregano.
