Sweet Potato Surprise Cake - cooking recipe

Ingredients

1 1/2 c. cooking oil
2 c. sugar
4 eggs, separated
1/4 c. hot water
2 c. cake flour, sifted
3 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 c. chopped nuts
1 tsp. vanilla
1 1/2 c. raw sweet potatoes, finely grated

Preparation

Beat oil and sugar to blend. Add egg yolks.
Stir in hot water.
Sift dry ingredients and add to mixture. Add potatoes, nuts and vanilla, blending well to make thick batter.
