Baked Fresh Boston Scrod - cooking recipe
Ingredients

1 1/4 lb. Boston scrod, cut into serving pieces
juice from 1 large lemon
pepper to taste
2 Tbsp. melted margarine
1/2 to 3/4 c. cracker crumbs (Ritz or similar type)
1 1/2 tsp. water
Preparation

Put lemon juice on scrod.
(Good to even let soak in juice an hour or more.)
Preheat oven to 450\u00b0.
Dip scrod in melted butter and then dip in cracker crumbs.
Place fish on a greased baking dish so fish pieces do not touch together.
Pepper to taste and salt if needed.
Sprinkle water between pieces of fish.
Bake 10 minutes for each 1 inch of thickness, then broil fish until light, golden brown (about 2 minutes).
Serve with lemon wedges.
Yield: 4 servings.
Serve immediately.
