Green Pea, Carrot And Mozzarella Salad - cooking recipe
Ingredients

1 c. fresh or frozen green peas
1 medium-size carrot, peeled and chopped
1/2 small stalk celery, chopped
1 oz. part-skim Mozzarella cheese, cut into small cubes
2 Tbsp. plus 1 tsp. buttermilk
2 green onions, chopped fine
1 Tbsp. plain low-fat yogurt
1 1/2 tsp. mayonnaise
1/2 tsp. red wine vinegar
1/2 tsp. dried basil, crumbled
1/8 tsp. black pepper
1/4 tsp. sugar
Preparation

In a small heavy saucepan, bring an inch of unsalted water to a boil.
Add the peas and carrot, cook for 5 minutes.
Drain, rinse under cold running water to stop the cooking and drain again.
Place in a medium-size bowl.
Add the celery and cheese and toss well to mix.
