Eggplant Casserole - cooking recipe
Ingredients

1 large eggplant, cooked and mashed
1 onion, chopped and cooked until tender
1 tsp. salt
1 egg
3 slices bread, crumbled
3 tomatoes, peeled and chopped or 2 c. canned tomatoes
1 c. diced cheese
Preparation

Mix all ingredients together.
Pour into a casserole dish. Bake at 350\u00b0 for 35 minutes.
Remove from oven and lay four slices of American cheese on top.
Bake until cheese melts.
