Pollo Guisada(Chicken Stew) - cooking recipe
Ingredients

2 1/2 lb. chicken
1 can tomato soup or 4 Tbsp. tomato paste and 1/2 c. water
juice of 2 limes or 2 Tbsp. vinegar
1 tsp. salt
1 onion, chopped
1 green pepper
2 mashed cloves garlic
1 tsp. dry coriander
1/2 c. red wine
1/2 tsp. sugar
1/4 c. cooking oil
Preparation

Cut chicken and wash it well.
Add lime juice, salt, onion, pepper, garlic and coriander and let it sit for about 1 hour.
In a big saucepan, put oil and sugar; heat.
Wait until the sugar burns.
Add chicken and move occasionally until it is brown all over.
Add wine, water and tomato soup.
Cook over low heat until the chicken is tender.
Serve over rice or with potatoes.
