Caramel Icing - cooking recipe
Ingredients

4 c. sugar
2 sticks butter
1 1/2 c. milk
2 beaten eggs
Preparation

Place 1 cup sugar in an iron skillet over medium heat.
Cook and stir over low heat.
After the butter melts, increase heat until a rapid boil.
Meanwhile, sugar in iron skillet has begun to melt.
When melted sugar is light brown and completely melted, pour into the boiling mixture.
Stir constantly.
Cook to soft ball stage.
Remove from heat and add 2 teaspoons vanilla flavoring.
Beat until icing has begun to cool and thicken.
Icing will begin to turn dull in color.
When at good spreading consistency, spread between layers and on sides.
