Mixed Greens(Weight Watchers) - cooking recipe
Ingredients

8 c. packed mixed greens (collard, turnip, mustard, kale or dandelion; I use frozen greens)
1 Tbsp. peanut oil
1/2 c. onion, finely chopped
1/2 c. celery, finely chopped
2 slices cooked bacon, drained and crumbled
1 Tbsp. vinegar
1/2 tsp. crushed dried red pepper flakes
1/2 tsp. salt

Remove any tough stems from greens; wash and drain to thoroughly remove sand and chop coarsely.
In Dutch oven over medium heat, heat oil; add onion and celery and cook 5 minutes or until tender, stirring occasionally.
Stir in greens; cover and cook 10 minutes until greens are wilted, stirring occasionally. Add bacon, vinegar, red pepper flakes and salt; cover and cook 5 minutes.
Add 2 cups water; reduce heat and simmer 1 1/2 hours, adding more water if necessary.
