Jefferds Brothers' Steamed Penn Cove Mussels - cooking recipe

Ingredients
    4 lb. mussels, cleaned and de-bearded
    1/2 c. dry white wine
    1/4 c. scallions or shallots
    2 cloves garlic, minced
    1 Tbsp. chopped parsley
    1 Tbsp. basil, thyme or herbs of choice
    4 Tbsp. butter
Preparation
    Place all ingredients but mussels in large saucepan over high heat and bring to boil.
    Once boiling, add mussels and cover pan. Steam 5 to 6 minutes or until shells are open.
    Remove from heat, discard any unopened shells and ladle mussels and nectar into large bowls.
    Serve with French bread, green salad and white wine.
