Apricot Crisp - cooking recipe

Ingredients
    3 c. pineapple juice
    1/2 c. date pieces (optional)
    1 tsp. vanilla (optional)
    3 Tbsp. cold water
    3 Tbsp. cornstarch or arrowroot
    6 c. apricot halves
    granola or Grape-Nuts
Preparation
    Blend first 3 ingredients until smooth.
    Bring to boil in saucepan.
    Thicken with cornstarch and cold water mixed together. Cook several minutes, stirring constantly, until thick and clear. Arrange apricot halves in a 9 x 12-inch baking dish.
    Pour sauce over apricots and top with granola.
    Bake at 350\u00b0 for 30 minutes. Yields 6 servings.
