Chicken Indienne - cooking recipe

Ingredients
    1 Tbsp. butter
    1 (3 lb.) frying chicken, cut in serving pieces
    1 onion, coarsely chopped
    1 green pepper, coarsely chopped
    2 Tbsp. lemon juice
    2 c. chicken stock
    1 1/3 c. mincemeat
    1 tsp. salt
    dash of pepper
    1 c. uncooked rice, long grain
    1 Tbsp. curry powder
Preparation
    In a large skillet, melt butter.
    Brown chicken.
    Remove chicken from skillet.
    Saute onion and green pepper.
    Add lemon juice, chicken stock, mincemeat, salt, pepper, rice and curry powder.
    Mix. Put in buttered dish.
    Arrange chicken over it. Cover and bake in oven for 1 hour at 350\u00b0.
