Crab Quesadillas - cooking recipe
Ingredients

1/2 c. butter
1/4 c. peanut oil
3/4 c. onion, diced
1 Tbsp. garlic, minced
1 lb. lump crab meat
1/2 c. mayonnaise
1 Tbsp. cilantro
small can green chilies
dash of salt
dash of pepper
12 tortillas
2 c. shredded cheese
Preparation

Mix butter and oil.
Use all but 2 tablespoons butter/oil mixture to saute onion and garlic.
Cool, add remaining ingredients, except for cheese and tortillas.
Brush tortillas with remaining butter/oil mixture, warm in skillet, buttered side down. Place crab mixture on half of unbuttered tortilla side, top with cheese, fold in half and bake at 500\u00b0 for 5 minutes.
Serves 3 to 5.
