Curried Bean Salad Bake - cooking recipe
Ingredients

1 (1 lb.) can fruit cocktail, drained
1/4 c. butter
1 chopped onion
1 green pepper, coarsely chopped
1 tsp. curry powder (should be put in hot butter first)
2 (1 lb.) cans kidney beans
2 fresh tomatoes, chopped
1/2 c. brown sugar
1 Tbsp. vinegar
1/2 bay leaf
1/2 tsp. dried thyme
1/4 tsp. salt
pepper
dash of red pepper sauce
Preparation

Heat butter, onion, green pepper and curry powder (should be put in hot butter first).
Cook until tender.
Add fruit cocktail, kidney beans, tomatoes, brown sugar, vinegar, bay leaf, dried thyme, salt, pepper and dash of red pepper sauce.
Bake at 350\u00b0 in casserole for 45 minutes, uncovered.
Garnish with green pepper rings.
Serve hot or cold (for summer).
