Lobster Newburg - cooking recipe

Ingredients
    1/2 c. butter or margarine
    2 Tbsp. flour
    1/2 c. light cream
    3 beaten egg yolks
    1 (5 oz.) can lobster, cubed
    3 to 4 Tbsp. cooking sherry
    2 tsp. lemon juice
    paprika
    toast points
Preparation
    Melt butter in chafing dish or skillet.
    Blend in flour. Gradually stir in cream.
    Cook slowly, stirring constantly until sauce thickens.
    Stir in small amount of hot mixture into egg yolks; return to hot mixture.
    Cook, stirring constantly, until thick, about 5 minutes.
    Add lobster; heat.
    Add cooking sherry and lemon juice.
    Salt to taste.
    Sprinkle with paprika.
    Serve on toast points.
    Serves 4.
