Eggplant Casserole - cooking recipe

Ingredients
    1 lb. eggplant
    1 c. celery, chopped
    1/2 c. onion, chopped
    1/2 c. green pepper, chopped
    3 Tbsp. low-fat oil
    1 c. Cream of Mushroom soup
    1/2 c. processed cheese
    enough bread crumbs to cover top
    salt, black pepper, onion salt and a little red pepper to taste
Preparation
    Pare and cube eggplant into casserole dish.
    Add chopped onion, celery, green pepper and microwave until tender, drain.
    Add oil, soup and cheese.
    Add bread crumbs to cover top.
    Bake in oven at 350\u00b0 for 25-30 minutes.
