Make-Ahead Grilled Salad - cooking recipe

Ingredients
    4 yellow squash, sliced lengthwise in half
    4 zucchini, sliced lengthwise in half
    1 large onion, slice in half through root end
    2 Tbsp. vegetable oil
    1 c. Italian salad dressing
    1 tsp. salt
    1/2 tsp. freshly ground pepper
Preparation
    Prepare a hot fire.
    Brush yellow squash, zucchini and onion with oil.
    Grill 6 inches from coals, turning occasionally until vegetables are slightly browned and softened (5 to 7 minutes). Remove from heat and let cool.
    Slice vegetables.
    In a large bowl, combine grilled vegetables, salad dressing, salt and pepper. Cover and refrigerate 8 hours or overnight.
    Drain vegetables and arrange on serving platter.
