Confetti Omelet - cooking recipe

Ingredients
    6 bacon slices
    1/3 c. chopped onion
    8 eggs, beaten slightly
    1 c. milk
    2 Tbsp. chopped pimiento
    1 Tbsp. chopped parsley
    1/2 tsp. salt
    1 c. shredded Cheddar cheese
    1 c. shredded Swiss cheese
    1 Tbsp. flour
Preparation
    Heat oven to 350\u00b0.
    Fry bacon until crisp; remove from skillet.
    Drain fat, reserving 1 tablespoon; crumble bacon. Saute onion in bacon fat until tender.
    Combine onion, bacon, eggs, milk, pimiento, parsley and salt.
    Toss Cheddar and Swiss cheese in flour; add to egg mixture.
    Pour into 1 1/2-quart casserole.
    Bake at 350\u00b0 for 40 minutes.
    Serve immediately. Serves 6.
