Catfish Court Bouillon - cooking recipe

Ingredients
    3 lb. catfish, seasoned and cut in pieces
    2 large onions, chopped
    1 large can tomato sauce
    3 cloves garlic, chopped
    salt and pepper
    1/4 c. parsley, chopped
    1/4 c. green onions, chopped
    1/4 c. celery, chopped
    1/4 c. bell pepper, chopped
    1 can Ro-Tel tomatoes
    cooked rice
Preparation
    Place onions (about 1/2) in bottom of pot that has been sprayed with nonstick product.
    Layer fish, tomato sauce, bell pepper and celery until all ingredients are used.
    Pour Ro-Tel last, topping with green onions and parsley.
    Add salt and pepper to taste.
    Cover.
    Simmer about 30 minutes.
    Shake pot; do not stir.
    Serve over rice.
