Ham And Bean Soup - cooking recipe

Ingredients
    1/2 to 1 lb. Great Northern dried beans
    3 qt. water
    1 ham bone with meat attached plus extra ham, cubed
    1 c. chopped celery
    2 c. diced potatoes
    1 medium onion, chopped fine or grated
    3 sliced carrots
    1 tsp. salt
    1/4 tsp. pepper
    1 lb. can stewed tomatoes
    1 lb. can diced tomatoes
Preparation
    Pick over dried beans and discard any ones that look bad, usually none.
    Cover beans with water; bring to a boil.
    Turn off. Cover and soak for about 2 hours.
    Pour off all liquid.
    Add 3 quarts of water and ham bone.
    Simmer for about 2 hours until beans are almost tender (al dente).
    Add other ingredients and simmer 2 more hours or longer, until the vegetables and beans are tender.
