Mimosa Cauliflower Salad - cooking recipe

Ingredients
    1 large cauliflower
    2 c. water
    2 tsp. lemon juice
    1 tsp. salt
    2 Tbsp. chives or parsley
    1/2 c. spring onions, chopped
    8 hard-cooked eggs, finely chopped
    4 tsp. Dijon mustard
    2 tsp. seasoned salt
    1 1/2 c. salad oil
    1/2 c. white wine vinegar
Preparation
    Leave the cauliflower head whole, but remove all green leaves. In a large pot, bring 2 cups of water to a boil and add lemon juice, salt and the cauliflower.
    Simmer, uncovered, for 10 to 20 minutes, until the cauliflower is just crisp.
    Remove; drain and cool to lukewarm.
