Chicken And Rice Casserole - cooking recipe
Ingredients

2 cups cooked rice
2 cups shredded monterey jack cheese
1 1/2 cups cooked, chopped chicken breast
1 c. evaporated milk
1/2 c. finely chopped red onion
2 eggs
1/4 c. finely chopped cilantro
2 Tbsp. butter or margarine
1 Tbsp. diced jalapenos
Preparation

Preheat oven to 350 degrees. Lightly grease casserole dish. Combine rice, cheese, chicken, milk, onion, eggs, cilantro, butter and jalapeno in prepared casserole dish, stir well. Bake 45-50 minutes or until knife inserted comes out clean. Season with salt.
