Eggplant Parmesan - cooking recipe

2 medium to large eggplants
1 1/2 c. flour
2 Tbsp. Italian seasoning (optional)
1 1/2 tsp. garlic powder (optional)
olive oil
meatless spaghetti sauce
Mozzarella cheese
Parmesan cheese
3 eggs
flour
salt
bread crumbs
Preparation

Peel eggplant and slice 1/2-inch thick.
Place slices on paper towels and sprinkle both sides with salt.
Cover with paper towels and weight down with a cutting board for 30 minutes to absorb excess moisture; pat dry.
Beat eggs well and set aside.
In separate bowl, mix flour, Italian seasoning and garlic powder. Place bread crumbs in separate bowl.
