Chicken And Orange Salad - cooking recipe

Ingredients
    1/2 c. long grain rice
    1 small onion, chopped
    salt and pepper to taste
    1 1/3 c. cooked chicken, diced
    2 stalks celery, chopped
    4 stuffed olives, chopped
    1/2 c. mayonnaise
    2 oranges
    lettuce leaves
Preparation
    Cook rice in boiling salted water until tender.
    Drain and while still hot, mix with onion and seasonings; cool.
    Add chicken, celery, olives and mayonnaise.
    Toss lightly.
    Peel oranges and split them into sections.
    Cut 1/2 of the sections into small pieces.
    Add to mixture.
