Lentil Soup - cooking recipe
Ingredients

2 c. dried lentils, soaked overnight
2 slices bacon
1/2 c. chopped celery
1/2 to 3/4 c. chopped onion
1/4 c. diced carrot
8 c. water
2 Tbsp. wine vinegar
1 clove garlic
2 1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. oregano
1 (16 oz.) can or 4 fresh diced tomatoes
Preparation

Drain lentils.
Combine all ingredients (except tomatoes and vinegar).
Cover and simmer 1 1/2 hours.
Add tomatoes with juice. Add vinegar.
Cover and simmer for about 30 more minutes.
