Creole Pepper Casserole(Serves 8) - cooking recipe
Ingredients

8 large green peppers
1 1/2 Tbsp. butter
1 1/2 Tbsp. flour
1 c. milk
salt to taste
1 can mushroom soup
1 1/2 c. cheese, grated
1 c. bread crumbs
Preparation

Chop peppers coarsely.
Cook in 3/4 cup water until tender; drain well.
Combine butter and flour in saucepan, blending well. Add milk and salt gradually, stirring constantly, until smooth and thickened.
Mix sauce with mushroom soup and peppers.
Pour mixture into buttered casserole.
Sprinkle cheese over pepper mixture.
Top with bread crumbs.
Bake at 300\u00b0 for 30 minutes. Yields 6 to 8 servings.
