Cuban Pork Roast - cooking recipe

Ingredients
    1 whole head garlic
    1 medium onion, sliced
    2 Tbsp. salt
    1 1/2 Tbsp. oregano
    2 tsp. cumin
    1 tsp. fresh crushed pepper
    juice of 2 lemons
    juice of 2 grapefruits
Preparation
    Pinch roast all over with fork.
    Crush garlic with seasonings and juices and add onion slices.
    Pour marinade over roast and marinate for 24 hours, turning several times.
    Bake at 325\u00b0 until meat temp is 175\u00b0 on meat thermometer.
    Bake covered first hour, then uncover for remainder of cook time.
