Vegetable Pitas - cooking recipe

Ingredients
    3 Tbsp. unsalted peanuts
    1 1/2 c. torn leaf lettuce
    1 c. thinly sliced cucumber
    1 c. diced tomato
    2/3 c. raisins
    1/2 c. thinly sliced celery
    1/2 c. torn romaine lettuce
    1/3 c. shredded carrot
    1/3 c. chopped onion
    1/4 c. shredded Cheddar cheese
    2 Tbsp. mayonnaise
    2 Tbsp. parsley flakes
    2 Tbsp. plain yogurt
    1 tsp. Dijon mustard
    1/4 tsp. paprika
    1/8 tsp. ground red pepper
    1/8 tsp. black pepper
    3 (7-inch) pita rounds, halved
Preparation
    Combine first 9 ingredients in a bowl.
    Toss gently; combine parsley flakes and next 6 ingredients, stir well.
    Add to vegetable mixture, tossing well.
    Spoon 1 cup vegetable mixture into each 5 pita halves, reserving remaining pita half for another use.
    Sprinkle with cheese; cut each pita half in half.
    Makes 5 servings.
