"Post Pentecost Potatoes" - cooking recipe

Ingredients
    6 to 8 large potatoes, peeled and mashed
    1 c. sour cream
    2 tsp. salt
    1/4 tsp. pepper
    2 Tbsp. chopped chives or green onion tops
    1/4 c. butter
    1 pkg. frozen spinach, thawed and drained
    1 c. (4 oz.) shredded Cheddar cheese
Preparation
    Combine all ingredients except cheese.
    Place in a greased 2-quart dish.
    Bake, uncovered, at 400\u00b0 for 15 minutes.
    Top with cheese and bake 5 minutes longer.
