Hoisin Hens - cooking recipe
Ingredients

2 Tbsp. olive oil
2 Cornish game hens
1 1/2 c. diced onions
2 tsp. minced garlic
1 1/2 tsp. fresh ginger root
1/4 c. soy sauce
1/4 c. hoisin sauce
1/4 c. dry sherry
1/2 c. chicken stock
Preparation

Place a heavy wok or pan over high heat.
Add oil.
When hot, add the game hens, breast down.
Reduce heat to medium.
Cover and cook 6 minutes, turning at half time.
Add remaining ingredients. Combine well.
Cover and simmer over medium heat 40 minutes, turning at half time.
Remove hens and halve them.
Sauce should be thick and syrupy.
If not, cook, uncovered, for few minutes to reduce.
