Ingredients

3 Tbsp. cornstarch
1 c. sugar
3 c. milk
3 eggs, separated
1 Tbsp. butter
1 Tbsp. vanilla
1 c. coconut
1 graham cracker crust or baked pie crust
Preparation

Mix cornstarch and sugar.
Add egg yolks, milk and butter. Cook in double boiler until thick.
Remove from heat.
Add vanilla and coconut.
Mix well.
Pour into pie crust and top with meringue.
