Rice Tetrazzini - cooking recipe

Ingredients
    8 small mushrooms
    5 Tbsp. butter
    3 Tbsp. flour
    2 1/2 c. half and half milk
    1/2 tsp. salt
    1/2 tsp. pepper
    1/8 tsp. ground nutmeg
    1 egg yolk, slightly beaten
    1 1/2 c. rice, cooked
    2 c. chicken or turkey, cooked and cubed
    1 pkg. frozen spinach, chopped, thawed and drained
    1 c. cheese, grated
Preparation
    Preheat oven.
    Butter 1 1/2-quart casserole.
    Saute mushrooms in 2 tablespoons butter.
    Melt remaining butter.
