Scalloped Eggplant - cooking recipe

Ingredients
    1 bell pepper, chopped
    1 small onion, chopped
    2 Tbsp. melted oleo
    1 large eggplant, peeled and cubed
    1 c. cheese
    4 c. chopped tomatoes (fresh or canned)
    2 tsp. salt
    black pepper
    1 c. buttered bread crumbs
Preparation
    Saute green pepper and onion in oleo until tender.
    Add eggplant, tomatoes, salt and black pepper.
    Simmer 10 minutes. Place mixture in a greased and shallow casserole dish.
    Sprinkle with bread crumbs and cheese. Bake at 350\u00b0 for 15 minutes or until eggplant is tender.
