Scalloped Potatoes(Serves 50 People) - cooking recipe

Ingredients
    20 lb. potatoes
    2 c. margarine
    2 c. flour
    4 qt. milk
    2 to 3 lb. cheese, grated (Velveeta)
Preparation
    Scrub, boil
    and
    cook potatoes.
    Peel and dice.
    It is best to make
    white sauce for 10 pounds of potatoes at a time: So melt in\ta
    saucepan
    one cup of margarine and blend in one cup of flour
    until
    smooth.
    Stir
    in
    2\tquarts of milk and continue stirring until thick and bubbly.
    Place approximately 10 pounds potatoes (diced) in
    an 18 x 25 x 2-inch pan.
    Cover with cheese, 1 to 1
    1/2
    pounds per pan.
    Bake at 350\u00b0 for 60 minutes.\tOne pan serves 25 people.
